Showers one day and humidity the next is a good sign we’re well into spring. It also means fresh produce abounds! We believe it’s important to eat what’s in-season, so why not have some fun and experiment with new recipes? Here are some of our favorite springtime veggies and recipes. If all else fails, just throw any of these on the grill, it never disappoints.
Creamy Asparagus, Lemon and Walnut Pesto – spring means… pesto season! Try experimenting with different in-season herbs and vegetables in place of traditional basil.
Chard and Leek Frittata – farm fresh chard combined with in-season leeks or green onion makes for the most delicious brunch.
Pickled Ramps – ramps are great in pasta, omelets, risotto, or simply sautéed. We love pickling fresh ramps to snack on them all summer long.
Grilled Artichokes with Yogurt-Dill Dipping Sauce – grilled artichokes make a great appetizer or light snack, dipping them in an herby sauce makes them even better.
